I got so sick of eating airplane and airport food that I decided to cook on our second day in Cambridge. It's really a matter of working with what we have (and we don't have alot). I made some pasta for lunch but was too hungry to take any pics. So here goes this salad for dinner. It's not grilled, I am not using the oven yet, I pan fried the chicken instead - tastes just as good!
Ok - so basically here are the steps I took.
1) Cut chicken breast into strips
2) Season with italian herbs, freshly ground black pepper and salt
3) Pan fry till there is nice colour on both sides
4) place baby spinach, bloom tomatoes, toasted walnuts in salad bowl. dress with cold pressed extra virgin olive oil, sea salt and pepper
5) serve with chicken on top.
So simple and surprisingly refreshing for a summer evening!
